I decided to look at cadence.
Cadence is the time between the last two throws (in frames which are 1/120th sec.).
Gallop is the absolute change is cadence.
The pattern looks noticeably cleaner when cadence is around 25 and gallop is <5.

A cadence of 25 corresponds to 288 throws per minute:
120 frames per second divided by 25 frames = 4.8 throws per second

7b_wizard - When "cadence" stayed same, it would be the "beat"? "Cadence" is "one beat"?
7b_wizard - "Gallop" is the (mathematical absolute amount of) difference of a cadence to the previous cadence, no matter if slower or faster?

7b_wizard - No need to explain, thx. I understand, you're measuring how near the juggling is to a metronome (or: stable-fluent, 'flowy'). The results (together with the video) show and tell, what and where goes wrong or well most.
