Right. Stilts.
Specifically, wooden peg stilts.
What is a sane height to start with?
I have a design in mind, which I know can make and should work. I just wonder how high to make them. I have tried to use stilts once or twice in the past, so am not a complete beginner, but am still very much learning.
Also, any other advice would be helpful. I already have knee guards, and know to fall on my knees with my torso back.

When teaching kids I start them on 30cm (1 foot) high stilts. I teach them not to fall on their knees but rather to do more of a martial arts roll. Bending knees to lower centre of gravity, twisting knees so you land on your side and then on to your back. The larger surface area reduces the impact of the fall. The other thing we teach is that it isn't a good idea to put your hand out to break your fall unless you particularly want a broken wrist.
